Look Ma, No Meat!

So, today is Meatout, when millions of people all over the world (except Germany, where they're ten days late) forgo meat all day long.

Of course, every day is Meatout for me, so my day has pretty much been the same. I did bring my lunch to Hampton Court today, a peanut butter sandwich, and I bought a package of parsnip crisps to go with it. For breakfast I had my usual whole grain cereal and soy milk. For dinner, we'll have whichever of the veggies from my veg box begs the loudest to be eaten. Last night we had some lovely purple sprouting broccoli.

It's half-snowing outside, so maybe some soup.

UPDATE: We ended up with baked potatoes, which begged really loud to be eaten, although they were pleading with their newly-sprouted eyes. (Unlike some people, I don't refrain from eating anything with facial features.) And some lovely purple sprouting broccoli, and a salad with the alfalfa sprouts from my box sprinkled liberally on top.

Pretty boring, for me. But I'm in a funky mood.

Breakfast was a grapefruit and a banana. Lunch was a big salad with avocado and a cup of split-pea soup. Dinner...well, I never know until I actually start cooking, but I'm leaning toward using the last of the collard greens in my garden and doing something with beans (maybe a Tuscan bean and greens soup?). Nothing earth-shattering today, just another day in the life of a vegan.

P.S. I knew you'd lived in N. Louisiana, but I didn't know you'd gone to school in Ruston. We stopped in the first restaurant we saw there, and miracle of miracles, it had at least 2 vegetarian dishes on the menu. In addition to the muffaletta, we had a pasta with olives, mushrooms, and tomatoes that was okay. I don't know if we got lucky or if the rest of the town is that progressive now!

I'm in. Yogurt for breakfast. Lentil salad for lunch.
Supper tonight will be spaghetti with last summer's preserved tomato sauce and a handful of dried mushrooms (it was either dry them or let them rot...).
Very satisfying eating. Very.

Every day is Meatout for me, too, of course. For dinner yesterday, we had baked Yukon Gold potatoes with non-dairy "butter," organic green peas, and Kathy's delicious strawberry parfait, made with the world's greatest strawberries, from Ponchatoula, Louisiana.

For once I did not have a home-baked vegan oatmeal raisin scone for breakfast. That has been my breakfast most every day for the past 15 years. Instead, I had some homemade vegan banana bread (with shredded coconut, raisins and walnuts).
For lunch I heated up some channa masals (made with chickpeas and potatoes) and basmati rice. Dinner was boring but satisfying, as it was late and I was starving--pasta with tomato sauce and steamed broccoli.

I didn't eat any meet yesterday, either. I am trying to go veggie at least two days a week and graduate to three.
