Best sweet potatoes ever.
I know sweet potatoes. Growing up in the South, I've always loved sweet potatoes (or yams, as some insist on calling them) the way only a native southerner can. (My husband and youngest daughter, both born in Ohio, don't care for sweet potatoes. I'm sure it's a result of the northerly latitude.)
My family used to serve them every Thanksgiving the traditional way, topped with miniature marshmallows. Because there's just not enough sugar available on the dessert table.
When I was older, I discovered this recipe in my hometown's Junior League cookbook. I made it for my family, and they all agreed, these had the marshmallow-topped monsters beat all to pieces. I've since veganized it, and no one's complained about the missing calories or fat.
This dish is easy to make, too. Here's how:
Sweet Potatoes with Pecan Topping
Note: You may need to double the topping amount if your casserole dish is large. You want enough to adequately cover the sweet potatoes. Luckily, however, it's easy to mix up more in a hurry.
4 to 6 medium sweet potatoes, peeled and cut into large chunks
1/2 cup brown sugar (or sweetener of your choice)
1/2 cup non-hydrogenated margarine
1 teaspoon vanilla
1/3 cup soy milk or cream
1/3 cup melted margarine
1 cup brown sugar
1/2 cup flour
1 cup pecans, chopped
Cover sweet potatoes with water and boil for 20 minutes, until soft. Drain and place in mixing bowl with sugar, margarine, vanilla and soy milk. Mix until smooth. Place in casserole dish that has been prepared with non-stick spray.
Make topping: Melt margarine and combine with remaining ingredients. Sprinkle on top of potato mixture. Bake 25 minutes at 350 degrees.
Notes on ingredients: You can use maple syrup instead of the brown sugar in the sweet potatoes, only use less: about 1/4 -1/3 cup will do. Likewise, for the topping you can easily substitute turbinado sugar, the brown raw sugar available in health food stores in the U.S. You could also try using whole wheat flour, though I've never done this and can't vouch for the results.
