A perfectly prepared meal, courtesy of the next generation
I haven't had much time to cook lately, and when I have, I've been preparing tried-and-true favorites for houseguests. Yesterday I spent the day in Bath, with my niece who's here for a few days. When we got home, after a full day of sightseeing, Daughter Number Two had prepared a delicious meal for us.
She made a black bean casserole, corn, and saffron rice, and my husband opened a nice bottle of Rioja Reserva. After a long drive home through the rain, I was famished—I passed peckish somewhere around Swindon and had a full blown starve on by the time I got to Reading. So it was nice to come home to such a perfect meal.
For dessert, she whipped up these wonderful Lime and Coconut Cupcakes:

Hopefully she'll share the recipe for the casserole later—it used tortillas, black beans and tomatoes. The cupcakes were from Vegan Cupcakes Take Over the World, a book we're eating our way through.
Speaking of cookbooks: When DNT arrived home in May, she was looking at my shelves of cookbooks, and said, "When you die, can I have your cookbooks?" Nice to know the cooking gene has survived for another generation.
