Vegan "French" toast, better than what you'll find on a breakfast table in France!
One thing I was sure I would have to give up as a vegan was French toast. But non, there are perfectly acceptable substitutes for the eggy batter. This one uses silken tofu and almond milk. It's similar in appearance to this version I adapted from a favorite recipe a couple of years ago.
The funny thing is, I've never seen French toast in France. Not even Pain Perdu (Lost Bread). Admittedly, I don't spend much time eating breakfast in France; hotels there definitely don't cater to vegans. I usually skip the breakfast or bring soy milk to the table. That's how I discovered the wonderful vegan soy cream that is sold in France; I mistook it for soya milk instead of cream.
This version of French toast is simple to make, too. I whipped it up when I heard my daughter stirring upstairs and had it ready to go when she came into the kitchen looking for breakfast. Unfortunately, she won't find anything this good—or this vegan—when she goes to France next week.

French Toast with Apples
1/3 cup silken tofu
1/2 cup apple sauce
1 cup almond milk
2 tablespoons maple syrup, or sugar
1 teaspoon cinnamon
small loaf of French bread, sliced 1 inch thick
OR use slices of whole-wheat sandwich bread
Apples:
1 tablespoon non-hydrogenated margarine
2 green apples, peeled and chopped
1 teaspoon cinnamon
1 teaspoon lemon juice
1 tablespoon brown sugar
Powdered sugar
Cinnamon
In a blender, combine the tofu, apple sauce, almond milk, syrup and cinnamon until smooth. Pour into a shallow pan or dish, wide enough to hold eight pieces of bread. Soak the bread on each side, turning after about 5 minutes.
Meanwhile, prepare the apples: Heat the margarine in a skillet. (Be careful it's not one you've recently used for cooking something spicy that clings to the Teflon.) Add the apples, cinnamon, lemon juice, and sugar. Saute the apples for about 10 minutes over medium heat, tossing every few minutes to cook evenly.
Heat another skillet, using cooking spray. Place the slices of soaked bread on the skillet, and cook over medium heat until brown on each side.
Remove to a plate. Combine a small amount of powdered sugar and cinnamon in a metal sieve. Shake the mixture over the French toast. Serve with the apples and maple syrup, if desired.
