Walnut, Flax and Coconut Bars
Yummy, chewy, sweet, and some other ingredients.
I thought about calling these "Omega-3 Bars" because they contain flax, an excellent source of omega-3, and walnuts, another good source, but that sounds more healthy than appetizing. They're also similar to hermit bars, but who wants to eat something named after anti-social behaviour? I could have called them Walnut-Studded Squares with Flaked Coconut and Cinnamon Scent, but that sounds really pretentious.
I also almost named them Kitchen Sink Bars, but again, who wants to eat a kitchen feature?
So I randomly selected a few ingredients and named them accordingly. The truth is, they have a lot of yummy ingredients, none of which predominates. The spicy molasses and cinnamon, the chewy raisins and coconut, the firm, sweet chocolate chips...you get the picture.
Now get the recipe:
Walnut, Flax and Coconut Bars
2 tablespoons flax seeds, ground
1/4 cup water
1/2 cup margarine
1 cup brown sugar
2 tablespoons molasses
1/2 cup soy yogurt
1 1/4 cup plain flour
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins
1/2 cup chocolate chips
1/2 cup shredded coconut
3/4 cup toasted walnuts, chopped
Prepare a 9x9 inch square pan with cooking spray. Preheat oven to 350 degrees.
Whisk flax seed with water in a small cup. Set aside. Combine the margarine and brown sugar in a bowl. Mix for 1-2 minutes until fluffy. Add molasses, mix. Add flax mixture and mix again.
Stir in the soy yogurt.
Measure the flour in a 2-cup measuring cup. Add the cinnamon, baking powder and salt, and stir to combine. Add the flour mixture to the margarine mixture, stirring slowly to combine.
Add the remaining ingredients: raisins, chocolate chips, coconut, and walnuts, stirring to combine. Pour into the prepared pan and bake for 20-25 minutes, until a toothpick inserted in the middle comes out clean. (Be careful you don't stick the toothpick into a chocolate chip, or it won't come out clean even if they're done!)
Serve warm, or heat briefly in a microwave.

walnuts, flax, coconut, raisins??? you managed to incorporate 4 of my favorite ingredients into one baked good!! yum!!

VeggieGirl, I should say also that while the chocolate chips are a nice additions, for health reasons they could be left out and the bars would still be delicious.

Oh my gosh! I finally looked to the side of your blog and realized you moved your food blog! I've been keeping up with your day posts and was wondering why you hadn't placed food up in a while! *slaps head* I'm so glad to have noticed lol! The bars look delicious!

these bars look so delectable... haha I bet they'd still taste amazing if you went with the kitchen sink name ;o)
